First thing I made with our CSA goodies: Zucchini & Rice GratinI loved making meals with just stuff we have lying around, and now that we are bountiful with fresh produce, I anticipate some new dishes being whipped up regularly.Ingredients:- 2 tomatoes*- 1 large zucchini*- 1 medium yellow onion*- 1 TBSP minced garlic- 2 cups of cooked basmati rice- 1 egg*- 1 cup of grated Parmesan cheese- a few slices of fresh mozzarella- olive oil for days- sprinkles of basil- salt ‘n’ pepa * items from our produce basketWhat do you do? Slice & roast the tomatoes & zucchini. Saute the onions & garlic in olive oil ‘til tender. Mix the onions/garlic with rice/cheese/basil/egg. By the way, you’re salt ‘n’ pepa-ing everything. Smoosh into a baking dish, top with roasted veggies. Bake at 450 until it’s bubbly and brown. Eat.The photo above makes it look greasy, but that’s just because this was taken when I ate it as a leftover for breakfast and had to nuke it in the microwave. You know microwaves always make things look grosser.
